Not Your Mom's Deviled Eggs

Unless you're my kids.

Deviled eggs are trendy right now and for good reason. They work as an appetizer, a brunch item, a buffet, or a snack and can come in all sorts of flavors. These are some favorites of mine. I took some of the Chipotle Deviled Eggs to a party last night and was met at the door by two ladies who claimed they were waiting for them to arrive!

The first thing you should know is how to turn out some perfectly boiled eggs. Place your eggs in a pot of water and bring to a boil. Turn off heat and remove from burner if using an electric burner. Cover the pot and let it sit for 12 minutes. Place them in cool water to stop the cooking and let cool before you try to peel them. That's all there is to it.


Chipotle Deviled Eggs:
Mash yolks with mayo and chipotle puree- see what that is here.
Salt and pepper to taste.
Garnish with your choice of candied pecan, candied jalapeno, cilantro, bacon.

Guacamole:
Mash yolks with avocado and mayo.
Salt and pepper to taste.
Garnish with a piece of tortilla chip and cilantro.

Classic with a twist:
Mash yolks with mayo and dijon mustard.
Salt and pepper to taste.
Garnish with candied pecan, bacon, and smoked paprika.

Salmon:
Mash yolks with sour cream and dill.
Salt and pepper to taste.
Garnish with smoked salmon, capers and fresh dill

Pimento Cheese:
Mash the yolks with a little mayo to get them smooth and then
fold in pimento cheese.
Add a little hot sauce if you want a kick.
Salt and pepper to taste.
Garnish with bacon, a slice of cherry tomato and chives

Shrimp:
Mash the yolks with mayo and Old Bay Seasoning.
Garnish with a small cocktail shrimp and a sprinkle of Old Bay.

Blue Cheese:
Mash yolks with mayo and blue cheese
It's okay if the cheese is a bit chunky still
Salt and pepper to taste
Garnish with a cherry tomato slice and bacon
