Cauliflower Rice Tabbouleh

Low Carb - Huge Flavor (and easy peasy)

 


 

Girl! This is my new 'go to' dish. I make up a big batch on Sunday and pair it with grilled chicken or meatballs from Trader Joe's. I sometimes add a little tzatziki sauce, feta cheese and sliced cucumber to fancy it up and make a healthy lunch bowl. And, since it's low carb, I've even lost a few pounds. Come on, summer!

I first tried frozen cauliflower rice (yuck) and then a friend turned me on to the fresh cauliflower rice in the produce section at Trader Joe's. Total upgrade. The texture is so much better and it doesn't really even taste like cauliflower with all of those delicious tabbouleh flavors. Not that I have anything against cauliflower, but I don't really have a thing for it, either.



What you'll need:
Bag of FRESH cauliflower rice  
4 green onions, sliced 
1 large cucumber, seeded and diced 
Several cherry tomatoes
3-4 Tablespoons chopped fresh parsley
3-4 Tablespoons chopped fresh mint
Olive Oil
Juice of 1 lemon (or use Lemon Pepper in a pinch)
Salt and Pepper

 
What you'll do:
In a large non stick pan like the Le Creuset Non Stick Braiser
(which, by the way, is one of my favorite pieces of cookware that I use all the time for everything) heat up a couple of tablespoons of olive oil over medium/high heat and saute the green onions until they start to look limp. 




Scrape the onions to one side and add another 2 teaspoons of oil and after the oil is heated, add the entire bag of cauliflower rice and a teaspoon of salt and some pepper (or lemon pepper). Saute for 5 minutes, stirring occasionally - rice should be slightly cooked, but not mushy- remove from heat and place the rice/onions in a large bowl to cool. Stir occasionally to speed up the cooling process.



In the meantime, dice that cucumber, quarter those tomatoes and chop the mint and parsley. You may use more or less parsley and mint that I did. It's all about your taste buds.

Once the rice has cooled, add the cucumber, tomatoes, mint, parsley, another teaspoon of salt, some more pepper, the juice of a lemon (if not using lemon pepper). Stir and taste to see if you need more herbs or salt and pepper.
