Flourless Chocolate Cake
This cake is relatively low carb when compared to a big slab of regular chocolate cake, yet it doesn't taste like you're chewing on a piece of tree bark. In fact, it's quite delicious! It's also easy, so win/win. This makes a small cake - about 6 small, but satisfying servings. It can easily be doubled and can be made to look fancy enough for a dinner party with a nice garnish.
What you'll need:
1 1/3 cup semi sweet chocolate (I used chocolate chips because I had some in the pantry)
4 large eggs
1 stick of butter
Pinch of salt if your butter is unsalted
Options (I love options!) Pinch of cinnamon, a pinch of cayenne pepper, a dash of vanilla)
Garnishes can be Amarena Cherries from Trader Joe's - oops, fell off that low carb wagon a bit there (but it was delicious!), or blueberries, strawberries or for you hard core Keto peeps, fresh whipped cream sweetened with a bit of Stevia.
What you'll do:
In a large bowl, mix the eggs on high speed with a stand or hand mixer for about 5 minutes until they have doubled in size and become all foamy.
In a small saucepan over very low heat, melt butter and chocolate (and any additional salt or spice) until smooth and creamy.
Preheat your oven to 350.

Go back to the eggs and give them a minute or two more mixing and then gently stir about 1/4 of the eggs into the chocolate mixture.

Add the chocolate mixture to the bowl with the remaining eggs a little at time and fold in gently.

Pour batter into a cake pan or an 8" x 8" glass pan that has been sprayed with cooking spray or buttered.
Place the pan in a large roasting pan and fill the roasting pan with 1" of water. This is called a water bath or if you're feeling fancy a 'Bain Marie' in French. It keeps the cake moist and prevents it from cracking and is often used when baking a cheesecake or custards.
Bake for 25 - 35 minutes, until a toothpick inserted in the middle comes out clean.
This is a very satisfying but light and moussy cake. I really enjoyed it and it felt like I was eating real dessert.
