Crab Cakes with Low Carb Option

 

I love crab cakes and I love options. This is the marriage of those two loves (cue sappy music). 

It seems that there is a lot of controversy on 'real' Maryland Crab Cakes and secret family recipes and the use of different ingredients, but let's just let that drama go and zen out to some yum.

What You'll Need:

1 pound of fresh crab meat (options: use canned crab to stretch your budget, but it won't be quite as tasty) - Check for shell fragments and cartilage

2 eggs (slightly beaten)

2 1/2 Tablespoons mayonnaise

1 1/2 teaspoon Dijon mustard

1 teaspoon Worcestershire sauce

1 teaspoon Old Bay Seasoning

1/4 teaspoon salt 

1/4 teaspoon black pepper

1/4 cup celery- chopped (this is optional, but it gives you extra veggies and bulks up the recipe a tad)

2 Tablespoons parsley- chopped

4 green onions - chopped 

1/2 cup of finely crushed pork rinds (I know, eww, but you won't know they're there) or Panko if you're not doing low carb

Lemons for garnish
Oil and butter for cooking - 2 Tbsp each
Mayo and Sriracha for a sauce

What You'll Do:
  
In a large bowl, combine mayo, mustard, eggs, Old Bay, salt, pepper, Worcestershire, and parsley. Mix well. Add celery and green onion and mix those ingredients in well. Then, carefully fold in the crab meat and pork rinds (or panko) very gently - just until mixed. 



Shape into patties (don't smoosh too firm) or mini patties and refrigerate for up to an hour prior to cooking to let flavors meld and set.














Heat up butter and oil in your favorite cast iron skillet (this is mine: https://www.lecreuset.com/signature-skillet) and cook for about 3 minutes on each side, until the cakes are a gorgeous golden brown. Hint: I use two spatulas to flip them the first time, as they are a bit delicate.

Stir some Sriracha into a small bowl of mayo to your desired heat preference and serve the crab cakes with sauce and a lemon wedge. 









Crab cakes pair well with  Cauliflower Rice Tabbouleh , a chopped salad or cole slaw. 

These also make fantastic party appetizers, especially when you make them smaller and serve as crab cake sliders on King's Hawaiian Rolls.  Top with a dab of the Sriracha Mayo and a thin slice of dill pickle.
