Roasted Radishes - Who Knew?

Roasted Radishes * Surprisingly Delish


I hosted a dinner party a few months ago and this is the dish that everyone loved. I had no idea radishes could be roasted until I eavesdropped on a conversation while I was standing in line at a fundraiser. Who knew? They are absolutely delicious when roasted and they are not spicy after being cooked. It's a nice sub for potatoes if you're doing low carb.

Be sure to make double what you think you'll want because trust me...you'll want more and they reheat well.


What You'll Need: 
 
2 bunches or bags of radishes (I buy them at my local farmers market or the bags of rainbow radishes at Trader Joe's) 
a few cloves of minced Garlic
Olive Oil
Salt and Pepper 

What You'll Do:

Preheat oven to 400 degrees.

Wash and trim the radishes (cut off the weird ends) and halve or quarter them if they are large. You want them all to be approximately the same size. 

In a large bowl, toss with enough olive oil to lightly coat them and then spread them out in a roasting pan or baking sheet. I use my Le Creuset Large Oval Baker for this and it's perfect. It browns the radishes perfectly and they don't stick to the pan.  It's really one of my favorite LC pieces. 


Ready to go in the oven


Sprinkle with salt and pepper and pop in the oven. 

Depending on your oven, your pan and the size of your radishes, they will take 25-40 minutes to cook. You want them to be really done and browned. Stir them around every 15 minutes or so and when they are done (soft and browned, but still juicy) sprinkle the minced garlic on and pop them back in the oven for a couple of minutes until the garlic is cooked. My LC baker has a black interior and it gets so hot that the garlic cooks without it going back in the over. It's kind of magical in a geeky way. 

Season with more salt/pepper if needed and enjoy. I made these last night with my 'Lazy Girl Ribs' and Mr. Wonderful ate two helpings. Success!
