Apple Pie Quesadillas

 Apple Pie Quesadillas 


 

Cinnamon, caramel and apples with a toasty flour tortilla (and maybe even some vanilla ice cream!). This is a super fast and easy dessert that will win hearts without making too many dirty dishes or heating up the oven.

What You'll Need:

3 Apples, I used 2 Granny Smith and 1 Honeycrisp. Peeled, cored and thinly sliced
Juice of half of a Lemon
¼ - ½ cup Brown Sugar (depending on how sweet you like your desserts)
1 Tablespoon Cinnamon
1 teaspoon Nutmeg
1 Tablespoon Bourbon (optional)
1 teaspoon Vanilla
3 Tablespoons Butter
Flour Tortillas***
Prepared Caramel Sauce
1 Tablespoon white Sugar mixed with 1 Tablespoon Cinnamon- set aside- to finish the tortillas
 
***You can use any size of flour tortillas that you like. The little tiny ones will make a cute one person dessert, while the larger ones can be cut into wedges like a traditional quesadilla.

 



What You'll Do: 

 

Place the sliced apples in a large bowl and mix with brown sugar, cinnamon, nutmeg, vanilla, lemon juice and bourbon.

 

Melt 1 Tablespoon of butter in a Le Creuset nonstick Braiser or Skillet or other nonstick pan. Pour the apple mixture in with the butter and cook on low until the mixture comes to a simmer, cooking until the apples are softened and the sauce has thickened.

 

 

 

Remove the apple mixture back into the bowl and wipe out the pan with a paper towel. Melt the remaining butter in a separate little bowl.


 

Place the pan back on the heat at low/medium and place a flour tortilla that has been brushed on one side (butter side down) into the pan. Spoon the apple filling on top of the tortilla. Don’t put too much or it will be really hard to flip. Drizzle a bit of caramel over the top of the apples, but not too much. This little drizzle is really just to help the quesadilla stick together and you'll be adding more on top when you're plating. 

 

Cook until the tortilla is nicely browned on the bottom. Add another tortilla on top, brush it with butter and very carefully flip it over. If it gets a little messy, so what? All good desserts are a little messy. After you flip it, sprinkle the top with some cinnamon/sugar mixture.


 

Let the second side cook until it’s brown and toasty and then slide it into a plate. If you’re using larger tortillas, cut into wedges to serve. Drizzle with more caramel sauce and (if you want to) serve with some vanilla ice cream.
