Easy & Healthy Breakfast, Lunch and Dinner
Easy, Delicious and (mostly) Healthy Ideas for Breakfast, Lunch and Dinner. You're Welcome!
We all know how to eat healthy, but getting organized in your head and in your kitchen is another story. Here are some reminders and ideas for healthy and easy meals.
Sheet Pan Dinners are simple to prepare and clean up with a Le Creuset Non Stick Sheet Pan or or Le Creuset Cast Iron Oval Baker. Pair a protein with veggies and a seasoning or
sauce from Tastefully Simple and pop it in the oven.
TIPS:
· *Bake at 400 – 425 to get everything nice and
browned. Line the pan with parchment or foil for super easy clean up.
· *If you’re using larger pieces of meat or chicken, put them in first and then add veggies a little later, or cut the protein into smaller pieces. If you're using larger meat cuts you can use veggies with a longer cook time like large pieces of potato, whole carrots or radishes.
· *Blast with the broiler at the end for extra browning and crispiness.
· *Very lightly toss the veggies in oil. Use avocado, grapeseed or extra virgin olive oil. Try Tastefully Simple Avocado Oil. It is perfect for high temps and has a light flavor.
· *If you are using a dry seasoning, rub into the protein and let it sit for a few minutes before cooking.
· *If using skirt or flank steak, marinade overnight in some olive oil, salt, lime juice, honey and a dash of wine to tenderize.

Meal Prep for Lunch
I take my lunch and breakfast to work to avoid spending the money and calories to eat out every day. It may take a little planning, but you can easily pack healthy and delicious meals.
First, get some nice containers. I prefer Pyrex containers, but some plastic ones are okay, too. Don’t forget to pack silverware or plastic ware and a sparkling water.
I like to make a batch of pulled pork or a roasted chicken on Sunday and then add rice, beans, corn, spinach, radishes, carrots, red peppers etc to make 'Lunch Bowls'. I also like to make a big salad that will last for a couple of extra days, like these below.

Adult Lunchables
Think of lunch like an adult lunchable. I’ve made a list of
all of my favorite things to pack in my lunchable. You can create a lot of
combinations. Choose a lot of fruits and veggies and get those in your belly for
lunch and breakfast. Note: My daughter says that those little bottles of wine aren't for packing lunch for the office. Whatever.

Overnight Oats
Combine ½ cup of regular old oats, ½ cup of milk (cow milk, soy milk, oat milk, almond milk etc) and other items of your choice in a small plastic ware cup or mason jar. Cover and put in the frig. Open the next morning, stir and eat. You can heat it up if you want, but it’s surprisingly delicious cold.

Blueberries with chopped apple, banana, or pear with Tastefully
Simple Cinnamon Apple Seasoning and/or ginger, a dash of maple syrup or honey
and a spoon of peanut butter.
Try chopped pecans, chia seeds, strawberries, a dash of vanilla, pumpkin spice, raspberries…anything you like! You can make several on Sunday and grab one each weekday morning.
Yogurt with fruit in a cup is an easy breakfast that travels well and I also love Grape Nuts with fruit. I bring a little almond milk in a separate container.
Egg muffins are great for the days when you want something savory.
Whisk 10 eggs with ½ cup of milk and your choice of veggies. I like to add chopped red pepper and Tastefully Simple Spinach and Herb seasoning or Citrus Herb seasoning, some chopped spinach and shredded cheese. Pour into a Le Creuset Non Stick Muffin Pan and bake at 350 until the eggs are set. These freeze well, too.
