My Favorite Chocolate Chip Cookies
I love these cookies because they aren't overly sweet, they are chock full of dark chocolate chunks and pecans and the sprinkling of flaked sea salt puts them over the edge with flavor. The cardamom adds a little exotic, but barely noticeable twist. Simply divine.
What You'll Need:
2 1/2 cups all-purpose Flour
1/2 teaspoon Baking Soda
1 Teaspoon Cardamom (optional)
12 Tablespoons Salted Butter (softened)
1 cup loosely packed Brown Sugar
1/2 cup Sugar
1 Large Egg
1 Egg Yolk
1Tablespoon Vanilla Extract
8 ounces Dark Chocolate Chunks (chopped up a little randomly in different size bits)
1 cup Pecans, roughly chopped
Flaked Sea Salt
What You'll Do:
Preheat oven to 325 degrees.
In a medium bowl, combine the flour, baking soda and cardamom and whisk it together.
Combine the butter, brown sugar and sugar with a stand mixer on high (a hand mixer works, too) for about 5 minutes until the mixture is really creamy and fluffy. Add the egg, the egg yolk and the vanilla and beat just until mixed.
Add the dry mixture to the butter mixture on low speed a little at a time until mixed well. Add the chocolate chunks and pecans.
Use a small scoop or spoon and form the dough into golf ball sized balls. They certainly don't have to really be round. In fact, I like them a little organically shaped because they are homemade and should look like it.
Place the dough balls on parchment paper on a cookie sheet or on a Le Creuset Non Stick Cookie Sheet and sprinkle each ball with a very small pinch of sea salt flakes.
Bake for about 13 minutes. This can vary depending on your oven, but the cookies should be slightly brown around the edges and fully cooked through. Share with friends and enjoy!
